One Pan Baked chicken & potatoes

This LOW FODMAP recipe is a tasty, super quick and easy one pan dish, perfect for those lazy nights!



This is a great midweek meal to add to your FODMAP friendly rotation meals! Serve with a side salad to complete the meal.


There is no fancy ingredients here, I used garlic and onion infused olive oil which makes the perfect alternative to onion in this dish. Only 1 medium sweet potato is used to keep within the low FODMAP guidelines of 1/2 cup per serve and I would definitely suggest reaching for an abundance of fresh rosemary to bring out the beautiful fresh flavour it provides.


For this recipe, I find that squeezing a fair amount of lemon juice onto the raw chicken before adding it to the pan adds a delightful flavour once the chicken has cooked in the oven, so I wouldn't suggest skipping this step! The flavours work perfectly with the fresh rosemary.

One Pan Baked Chicken & Potatoes (FODMAP Friendly)

Serves: 4 Prep Time: 5 mins Cook Time: 45-50 mins Total Time: 50-55 mins


Ingredients:

2 tbsp garlic and onion infused olive oil

1 medium sweet potato, quartered

5 Medium Potatoes, quartered

Salt and pepper, to taste

1 lemon

250g chicken drumettes

250g chicken wings

2 sprigs fresh rosemary


Directions:

  1. Preheat the oven to 200° C (fan forced).

  2. In a large baking dish, drizzle 1 tbsp of olive oil on the base. Add the sweet potatoes, potatoes, salt and pepper.

  3. In a strainer add the chicken drumettes and wings, squeeze lemon over them, mix and pat dry with a paper towel.

  4. Add the chicken to the baking dish and drizzle the remaining olive oil. Sprinkle additional salt and pepper, then add the rosemary.

  5. Mix all ingredients together, then rearrange the chicken so that they are evenly distributed.

  6. Place the dish into the oven for 45-50 minutes, turning the chicken at the halfway mark. Ensure the chicken is cooked thoroughly.

  7. Serve with a side salad and enjoy!


Store these potatoes in the fridge for up to 3 days.
