These potatoes are a great addition to your gluten free meal! It can go with anything from chicken, steaks, lamb chops and fish! Or simply have it on its own as an afternoon snack, it is hearty enough to keep you satisfied but not overly full.
This is a super easy and tasty side dish that anyone can enjoy... I mean who doesn't like potatoes?
Once these potatoes are cooked and super soft, simply remove the insides and transfer it to a bowl. Then add some gluten free ham, sour cream, chives and mix together until you get a smooth and creamy consistency. Transfer the creamy potato mixture back into each potato and top them with a sprinkle of cheese for that extra flavour. Pop them back into the oven to melt the cheese and now these creamy stuffed potatoes are ready to eat!

Sour Cream & Chive Stuffed Potatoes
Serves: 6 Prep Time: 5 mins Cook Time: 1hr 15 mins Total Time: 1 hr 20 mins
Ingredients:
6 large white potatoes, skin on, washed and dried
4 spring onions, thinly sliced
30g gluten free ham, thinly sliced into small squares
200g light sour cream
Salt and pepper, to taste
¼ cup cheese, grated
Directions:
Preheat the oven to 180° C (fan forced) and line a baking tray with baking paper.
Place the washed and dried potatoes onto the lined baking tray and place into the oven for up to 60 minutes, or until the potatoes are completely soft.
With a metal spoon, carefully scoop out the contents of each potato, leaving a thin layer. Place the contents into a large bowl.
In the same bowl, add the spring onions, ham, sour cream, salt and pepper. Mix with a fork and mash the potatoes at the same time.
Spoon the potato mixture back into each potato, then sprinkle cheese onto each potato. Place into the oven for 10 minutes or until the cheese melts.
Serve with your choice of meat.
