Fudgy Chocolate & Cherry Brownies

Chocolate and cherries, what else could you ask for this Christmas...


These brownies are absolutely irresistible. They are super fudgy and gooey on the inside with a crispy top layer.


The best part about these brownies are that they are gluten free and you can't even tell the difference! If you are craving something sweet and chocolatey, then these are it, they are super quick and easy to make and completely ready in 40 minutes. The cherries and coconut bring out the Christmas flavours, perfect to bring along as a Christmas dessert!

Fudgy Chocolate & Cherry Brownies


Serves: 12 Prep Time: 10 mins Bake Time: 25-30 mins Total Time: 35-40 mins


Ingredients

180g gluten free dark baking chocolate block (I use 45% dark)

50g butter, unsalted

3 eggs, room temperature

75g raw caster sugar

½ cup cherries, pitted, sliced into halves

110g almond flour

¼ tsp salt

¼ cup gluten free dark chocolate chips, for topping

1 tbsp coconut for garnish, desiccated (optional)


Directions

  1. Preheat the oven to 180° C (fan forced) and line a 7x7 inch square baking tin with

  2. baking paper.

  3. In a heat-proof bowl above a pot of simmering water, melt the block of chocolate and butter together, stirring frequently. Set aside.

  4. In a bowl of a standstill mixer with a whisk attachment, on a high speed beat the eggs and sugar together until fluffy. Alternatively, you can use a handheld mixer, mixing on a high speed for 4-5 minutes or until fluffy.

  5. Pour the melted chocolate mixture into the egg mixture and with a spatula mix together until combined thoroughly.

  6. Add the cherries, almond flour and salt to the wet mixture. Fold together with a spatula until combined.

  7. Pour the mixture into the lined baking tin and add a few more cherries to the top of the batter, along with a sprinkle of chocolate chips. Place in the oven for 25-30 minutes.

  8. Allow the brownies to cool in the baking tin before transferring to a wire rack.

  9. Once cooled, sprinkle some desiccated coconut on top (optional). Cut evenly into 12 squares.

  10. Serve and enjoy!


Store these brownies in an airtight container at room temperature for up to 4 days.
